Ghislain Payer & Daughter Champagne
This family-owned estate, located in Fleury-la-Rivière between Reims and Épernay in the Marne Valley, is now run by Elise Payer, who took over from her father, Ghislain Payer, in 2014. Cultivated with care and patience, the 4 hectares of this small estate are primarily planted with Pinot Meunier (45%) and Chardonnay (45%), with a small portion of Pinot Noir (10%). The limestone terroir, rich in marine fossils and well-known in this region, imparts a distinct minerality to the wines. 

Ghislain Payer Champagnes are aged in the cellar for as long as necessary to allow the aromas to fully develop, much longer than required by Champagne regulations (15 months). Thus, the non-vintage cuvées age for at least 3 to 10 years before being released.
