Champagne Ghislain Payer et Fille

This family-owned estate, located in Fleury-la-Rivière between Reims and Épernay in the Marne Valley, is now run by Elise Payer, who took over from her father, Ghislain Payer, in 2014. Cultivated with care and patience, the 4 hectares of this small estate are planted primarily with Pinot Meunier (45%) and Chardonnay (45%), with a small proportion of Pinot Noir (10%). The limestone terroir, rich in marine fossils—a hallmark of this region—lends the wines their distinctive minerality.
