Champagne Ghislain Payer et Fille
This family estate located in Fleury-la-Rivière between Reims and Epernay, in the Marne Valley, is now run by Elise Payer, who took over from her father Ghislain Payer in 2014. Cultivated with care and patience, the 4 hectares of this small production are mainly planted with Pinot Meunier (45%) and Chardonnay (45%), with a small proportion of Pinot Noir (10%). The limestone terroir, rich in marine fossils and well known in this region, brings minerality to the wines.
Ghislain Payer Champagnes are kept in the cellar for as long as necessary for the aromas to fully develop, much longer than required by Champagne regulations (15 months). Thus, non-vintage cuvées age for at least 3 to 10 years before being sold.
