Didier and Olivier Gimonnet continue the family tradition, cultivating 30 hectares and 40 plots across five villages in the Côte des Blancs: Cuis, Cramant, Oger, Chouilly, and Vertus. They strive to produce the purest wines possible, with low dosages. As lovers of the vine, their viticulture methods are focused on respecting the soil and biodiversity. Pioneers in parcel-by-parcel vinification in stainless steel vats, in the art of blending and in producing genuine champagnes without dosage, the Gimonnet style is recognizable in its fine, precise and slender complexity.

About the estate:
The Gimonnet de Cuis family dates back to the 18th century. Champagne production began in the 1920s with Pierre. His son Michel was an early adopter of single vineyard winemaking. His grandsons Didier and Olivier joined the business in the 1980s and took over in 1996. They manage a large estate (29 hectares) in the Côte des Blancs, producing grand cru and premier cru wines. Their range includes blanc de blancs, but no rosé.

About the estate:
Few Champagne winegrowers can claim, like Didier and Olivier Gimonnet, to have a 28-hectare vineyard in the Côte des Blancs, including 12 hectares of grand cru vineyards in Cuis, Vertus, Cramant, Chouilly, and Oger. The two brothers continue to blend terroirs, perpetuating their refined, restrained style, without any harshness (malolactic fermentation completed) and never exuberant; they appeal to novices and lovers of great blancs de blancs alike. The Gimonnet brothers brilliantly tame the Chardonnays of Cuis, which are often cold and austere.

Light yellow color with green highlights. A refined nose revealing notes of chalk, light toast, and fresh herbs. On the palate, it is full-bodied, opulent, refined, light, and fresh—a successful marriage of seemingly contradictory sensations. Great.
