Bettane & Desseauve
Rated Estate (2025 Guide) 4*Stars (Producers of the very highest quality, the pride of French viticulture)
About the estate:
Didier and Olivier Gimonnet carry on the family estate, cultivating 30 hectares and 40 plots across five villages in the Côte des Blancs—Cuis, Cramant, Oger, Chouilly, and Vertus—striving to produce the purest expression of these wines with low dosage. As true lovers of the vineyard, their winemaking approach is focused on respecting the soil and promoting biodiversity. Pioneers in plot-by-plot vinification in stainless-steel tanks, in the art of blending, and in producing truly dosage-free champagnes, the Gimonnet style is recognizable for its refined, precise, and elegant complexity.

About the estate:
The Gimonnet de Cuis family traces its roots back to the 18th century. The champagne house was founded in the 1920s by Pierre. His son Michel was an early adopter of single-vineyard winemaking. After joining the estate in the 1980s, his grandsons Didier and Olivier took over in 1996. They manage a large estate (29 ha) in the Côte des Blancs, comprising Grand Cru and Premier Cru vineyards. Their lineup features Blanc de Blancs, with the exception of rosé.

Rated estate (2025 guide) 1*Star (Up-and-coming stars or high-quality winemakers producing wines of a high standard—you won’t be disappointed when you taste the wines from these estates)
About the estate:
Few Champagne winemakers can claim, as Didier and Olivier Gimonnet do, to manage a 28-hectare estate in the Côte des Blancs, including 12 hectares of Grand Cru vineyards in Cuis, Vertus, Cramant, Chouilly, and Oger. The two brothers continue the tradition of blending terroirs, upholding their refined, understated style—free of any harshness (thanks to malolactic fermentation) and never overly exuberant—appealing to novices and connoisseurs of great Blanc de Blancs alike. The Gimmonets brilliantly tame the Chardonnays of Cuis, which are often cold and austere.

About the wine:
Subtle aromas of citrus, pear, lemon cream, and chalk. The medium-bodied palate is fresh and crisp, with mineral notes and fine bubbles. Clean and balanced, with plenty of freshness and liveliness. A delicate, creamy finish. Enjoy now.

Wine rated (2025 guide) 90/100
About the wine:
With a pale yellow hue, the Champagne Premier Cru Cuis Blanc de Blancs Brut NV is made exclusively from Chardonnay grapes from the 2022 vintage. The nose is inviting and floral, with aromas of pear, fresh green apple, lime sorbet, citrus blossoms, and shortbread. Medium-bodied, it is refreshing and pure, with notes of candied lime and citrus, chalky earth, and a fine mousse, finishing with a tangy note on the palate. This is a pure, crystalline wine—accessible and ready to drink now or within the next 5 to 7 years. Disgorged in February 2025, with a dosage of 5 grams per liter.

As a native of the Champagne region, I wanted to believe the reviews, and I gave it a try! In the end, I'm disappointed by this champagne—it's certainly decent, but too ordinary!
