Whole clusters were cooled overnight, then gently pressed; the resulting juice was transferred to temperature-controlled stainless steel tanks at 9°C. After settling, fermentation took place for one month at 16–18°C.

About the estate:

The vineyard is located in the heart of the magnificent Ortolo Valley and produces wines that are well-defined and properly vinified, though they lack the distinct character of the very best. We particularly recommend the rosé, which perfectly lives up to expectations.

About the estate:

Founded in 2000, this estate—located in the enchanting setting of the Ortolo Valley—has been entirely planted with 16 hectares of vineyards surrounded by scrubland, a unique setting where mountains meet the hills. The first certified organic vintage produced here was the 2005. Élisabeth Quilichini’s hard work is paying off, producing a rosé, a white, and two reds of excellent quality, aged in large oak casks and capable of aging well. The estate has successfully evolved toward reds with a rich, aromatic character, and last year it earned its first well-deserved star.
