Whole clusters are chilled overnight, followed by gentle pressing; the juice is then transferred to temperature-controlled stainless steel tanks at 9°C. After settling, fermentation takes place for one month at 16–18°C.

About the estate:

The vineyard is located in the heart of the magnificent Ortolo Valley and produces wines that are well-defined and properly crafted, though they lack the distinct character of the very best. We particularly recommend the rosé, which fully lives up to expectations.

About the estate:

Founded in 2000, this estate, situated in the enchanting setting of the Ortolo Valley, has been fully planted with 16 hectares of vineyards surrounded by Mediterranean scrub—a special place where mountains meet the hills. The first certified organic vintage here was the 2005. Élisabeth Quilichini’s work is bearing fruit, yielding a rosé, a white, and two reds of excellent quality, aged in large oak casks and capable of aging well. The estate has successfully evolved toward reds with an infused and fragrant character, earning a well-deserved first star last year.
