The grape clusters are cooled before processing; all operations are carried out in an oxygen-free environment using dry ice to preserve the grapes’ aromas and reduce the use of SO2. The grapes are destemmed, followed by very gentle pressing in a vacuum press, and the must is fermented at a controlled temperature for about 15 days.
