About the estate:

Maison Antech and winemaker Aurélien Carrelas have joined forces to offer "Pardi!", a natural aperitif cocktail and local alternative to industrial orange-flavored fizzy drinks. A native of Luc-sur-Orbieu, Aurélien Carrelas is a winemaker in Saint-Paul de Fenouillet, but also a distiller in the Corbières region. After reviving the quinine-based tonic Kina Karo, he met Françoise Antech and her son Baptiste, from the famous Limoux-based company of the same name. The idea was to create a French-style spritz for aperitifs. From their discussions, Pardi! was born. This Occitan exclamation expresses the obviousness of an aperitif that is both distinctive and natural, the result of a happy marriage between a local liqueur with orange accents and sparkling wine from the Limoux appellation, as a response to industrial cocktails.
