About the estate:

Maison Antech and winemaker Aurélien Carrelas have teamed up to offer “Pardi!”, a natural aperitif cocktail and a local alternative to industrial orange-flavored sparkling drinks. A native of Luc-sur-Orbieu, Aurélien Carrelas is a winemaker in Saint-Paul de Fenouillet and also a distiller in the Corbières region. After reviving the quinine-based tonic Kina Karo, he met Françoise Antech and her son Baptiste, from the famous Limoux-based house of the same name. The idea: to create a French-style spritz for the aperitif. From their collaboration, Pardi! was born. This Occitan exclamation captures the essence of a distinctive and natural aperitif, born from the perfect marriage of a local liqueur with orange notes and sparkling wine from the Limoux appellation—a response to mass-produced cocktails.
