A cuvée produced mainly from a plot of old Grenache Noir vines that recently became part of the Mas estate. Its name evokes the role of the Vestal Virgins, guardians of the Sacred Fire in ancient times, drawing a parallel with the role of the winemaker, who works to extract the essence of the fruit of the vine through his labor and artistry. A wine of great complexity, with a mineral finish reminiscent of the terroir. A great Languedoc wine in very limited quantities!

About the estate:

Rigorousness and care, intelligence and precision, as well as a clear vision of great wine, have brought the reds of the talented Vincent Goumard to the top. They are part of an exemplary classicism that never tends towards austerity. The evolution of these qualities, without losing anything, towards a stunning sensuality is the culmination of a cycle dominated by precision and finesse of tannins. About the estate:

After initially pursuing careers in consulting, Vincent and Isabelle Goumard took over this beautiful estate in 2004, which was founded in the early 1990s by Jean-Pierre Jullien. They had previously visited around twenty estates in Languedoc and Roussillon, but the power of this location, in the heart of the Terrasses du Larzac, won them over. The couple quickly demonstrated their talent, with a keen understanding of their vineyards and geological variations, respect for the vines, and high standards of winemaking. Over the years, their style has become more refined, with increasingly delicate and complex wines, elegant texture, and magnificent aging potential. Mas Cal Demoura is undoubtedly one of the region's leading estates. After an interesting but slightly below-par 2021 vintage, the estate has produced some superb 2022 wines. The third star is clearly within reach.
