A cuvée derived almost entirely from a plot of old Grenache Noir that was recently incorporated into the Mas estate, whose name evokes the role of the Vestal Virgins, guardians of the Sacred Fire in antiquity, and draws a parallel with the role of the winemaker, who strives to extract the essence of the vine’s fruit through his work and artistry. A wine of great complexity, with a mineral finish that reflects the terroir. A great Languedoc in very limited quantities!

About the estate:

After initially working in consulting, Vincent and Isabelle Goumard took over this beautiful estate in 2004, which had been founded in the early 1990s by Jean-Pierre Jullien. Although they had previously visited some twenty vineyards in Languedoc and Roussillon, they were captivated by the power of this place, nestled in the heart of the Terrasses du Larzac. The couple quickly demonstrated the full extent of their talent, with a keen understanding of their vineyard plots and geological variations, a deep respect for the vines, and exacting standards in winemaking. Over the years, their style has refined, producing wines that are increasingly delicate and complex, with elegant structure and magnificent aging potential. Mas Cal Demoura is undoubtedly one of the region’s leading estates. Following an interesting but somewhat underwhelming 2021 vintage, the estate has produced superb 2022 wines. A third star is clearly within reach.
