“A fresh, rounded, and easy-drinking balance in this light, airy wine—a Gem not Gem be missed!”

This Favorite cuvée, made primarily from Syrah grapes grown at altitudes of over 300 meters, is characterized by finesse, richness, and generosity. On the nose, smoky and balsamic notes give way to hints of black fruit and thyme. The palate is concentrated yet crisp, blending wild berries with a hint of graphite.

Rated estate (2026 guide) Featured (Successful wine)

About the estate:

Winemakers Adèle Arnaud and Olivier Gil honed their craft under the guidance of renowned winemakers before settling at this Haut-Languedoc estate in 2014. They cultivate (organically) 11 hectares of old vines in the Faugères appellation and 4 hectares in the Côtes de Thongue IGP. Hand-harvesting and the use of native yeasts are standard practice here.

Wine rated (2026 guide) 92/100

Rated estate (2025 guide) Selected (Please note that this guide is a ranking, and as such, all the estates listed here—even those without a star—represent, in our view, the pinnacle of French winemaking.)

About the wine:

Aksou, a Syrah-dominant but not overpowering wine, also produced at high altitude, reveals a hint of spice against a backdrop of elegant red fruit.

About the estate:

Adèle and Olivier met in Montpellier before working on various estates in Collioure. The allure of schist led them to Faugères—more specifically, to Fos—where they discovered pockets of old vines. In less than 10 years, they have become the new face of the appellation and today offer a clear and accurate expression of the schist terroirs. Their vines, averaging over 30 years of age, are nestled at altitudes between 200 and 400 meters. The different styles of wine are the result of diligent work on individual plots, and a transition to organic farming began in 2019. With the 2022 harvest, the couple has taken on a new space: a winery on the road to Pézenas, complete with a very comfortable guesthouse.

Review by Mr. Gilles D. Published on April 25, 2026

What strikes you right from the first sip of this cuvée is the intensity of the flavors of perfectly ripe fruit, enhanced by smoky and peppery notes, an intensity that is itself balanced by a lovely mineral freshness. The texture is all the more juicy and dynamic, with velvety tannins of great finesse, while the aromatic persistence is surprising. This terroir-driven wine paired wonderfully with a braised beef shank served with caramelized baby vegetables. Score = 4.1.
