About the estate:

La Réserve d’O is a ten-hectare estate located in Arboras on the heights of the Terrasses du Larzac. Created in 2004 by Frédéric and Marie Chauffray and run according to biodynamic principles, it quickly became one of the region's most beloved addresses. The cuvée that bears the estate's name is very rich and slender in style, without oak aging. It has evolved considerably and since 2011 has been ranked among the leading cuvées of the Languedoc. Bilbo, named in homage to the city of Bilbao, is predominantly Cinsault, while Hissez-O has a higher proportion of Syrah. These are good representatives of the Terrasses du Larzac appellation, with a rather full-bodied style.

About the estate:

Located at altitude on the Arboras plateau, the vineyards (12 hectares) here seek out the soil beneath the stones. Established in 2005, Marie, the new president of the Terrasses du Larzac union, and Frédéric Chauffray work biodynamically and vinify using gentle methods (minimum SO2, no yeast addition, fining or filtration) from harvests where each grape is carefully selected.

Frédéric Chauffray has two passions: rock music and wine. Between his Gibson guitar and viticulture, he ultimately chose the latter. A wine merchant with his wife Marie since 1990, in 2004 they moved to the Terrasses du Larzac, in the commune of Arboras, at an altitude of around 400 meters, to found La Réserve d'O. Benefiting from this cool geographical location in the foothills of the Larzac plateau, below the Col du Vent, and a very respectful and non-interventionist approach to viticulture, the couple quickly began producing open and joyful wines, a far cry from the more austere and Jansenist styles of some wines in the area. The skillful management of aromatics and tannins leads us to award this estate its first star.
