The main grape varieties found on the Estabel terroirs include Clairette, White Grenache, Rolle, Bourboulenc, Viognier, Terret Bourret, Roussanne, and Marsanne for whites; and Syrah, Black Grenache, Mourvèdre, Carignan, and Cinsault for reds and rosés.

L'Estabelproduces wines under the AOP Languedoc, Languedoc Cabrières, and Clairette du Languedoc appellations, highlighting the distinctive character of their schist-based terroir. The winery features modern, high-performance facilities where the grapes are vinified separately and with passion.
