“A complex and deep Saint Chinian made from a blend of old vines—a true delight!”

Les Païssels is a full-bodied, sun-kissed wine, rich in complexity with notes of spice, candied orange blossom, and chocolate. It stands out on the palate for its elegance and length. A splendid wine with excellent aging potential.

Wine rated (2024 guide) 90/100 (2020 vintage)

Rated estate (2025 guide) 3*Stars (High-quality production, setting the standard in its sector)

About the estate:

This young winery is run by two agricultural engineers, one of whom is a former director of a Fitou winery who took over the family vineyards after they left the cooperative. Following the generous 2016 vintage and the outstanding 2017 vintage, we noted the exceptional quality of the 2018 vintage, a benchmark wine for schist terroirs. With the 2019 vintage continuing this impressive momentum, we are happy to award it a third star.

Rated estate (2025 guide) 2*Stars (Outstanding wine)

About the estate:

Vivien Roussignol and Marie Toussaint started out in 2011 with just one hectare of bush-trained vines grown on schist-rich hillsides. They have gradually expanded the vineyard, focusing on old vines and preserving a rich heritage of grape varieties (about twenty today). The 12 hectares have been in the process of converting to organic farming since 2019.

Review by Mr. Gilles D. Published on August 3, 2024

Favorite this vintage, boasting a thoroughly appealing Southern authenticity that lacks neither charm nor substance. The warm, full-bodied, and generous palate unfolds a brilliant array of flavors—from jammy black fruits to notes of bitter cocoa and licorice root, joined by hints of Mediterranean scrub. Displaying plenty of chew and density, the well-ripened fruit is enveloped by velvety tannins accompanied by a lovely roundness and imbued with the sunny character of the vintage. Remarkable concentrated and fragrant length, underscored by a hint of freshness to prolong the pleasure. Excellent R.Q /P. Hiding their strong temperament well beneath a understated presentation, the Paissels elevated a Berber couscous with ras el hanout and harissa, shared with the family. Score = 4.3.
