About the estate:

This new venture is run by two agricultural engineers, including a former director of a Fitou winery who took over the family vineyards after they left the cooperative. After a generous 2016 and a highly successful 2017, we noticed the high quality of the 2018 vintage, a benchmark wine for schist terroirs. With the 2019 vintage continuing this impressive momentum, we are happy to award them a third star.

About the estate:

Vivien Roussignol and Marie Toussaint settled here in 2011 with just one hectare of goblet-pruned vines grown on schist slopes. They gradually expanded the vineyard, favoring old vines and preserving a rich heritage of grape varieties (around twenty today). The 12 hectares have been in conversion to organic farming since 2019.

Favorite this cuvée with its utterly seductive Southern authenticity, which lacks neither style nor substance. The warm, full-bodied, and generous palate offers a brilliant palette of jammy black fruit flavors, followed by notes of bitter cocoa and licorice root, joined by essences of maquis. Showing great chewiness and density, the ripe fruit is wrapped in velvety tannins accompanied by a lovely roundness and imbued with the sunny character of the vintage. Remarkable concentrated and fragrant length, underscored by a hint of freshness to prolong the pleasure. Excellent R.Q. /P. Hiding their strong character beneath a sober presentation, the Paissels wines enhanced a Berber couscous with ras el hanout and harissa, shared with the family. Rating = 4.3.
