Domaine Les Païssels
The Domaine Les Païssels is located in Babeau, 5 km from St Chinian. Marie Toussaint and Vivien Roussignol, agricultural engineers, cultivate 12 hectares of vines in an environmentally friendly manner.
The Païssels terroir is mainly composed of schist. The vines, aged between 30 and over 100 years old, are located at the foot of the Montagne Noire.
The grapes are harvested by hand and each plot is vinified in a dedicated vat, which allows the potential of the different grapes of Domaine des Païssels to be better understood according to the vintage.
