The Païssels terroir consists primarily of schist. The vines, ranging in age from 30 to over 100 years, are located at the foot of the Montagne Noire.
The grapes are harvested by hand, and each plot is vinified in its own designated tank, which allows for a better understanding of the potential of the various grapes from Domaine Les Païssels depending on the vintage.
