Domaine Les Païssels
Domaine Les Païssels is located in Babeau, 5 km from St Chinian. Marie Toussaint and Vivien Roussignol, agricultural engineers, cultivate 12 hectares of vineyards using environmentally friendly methods.
The soil at Les Païssels consists mainly of schist. The vines, ranging in age from 30 to over 100 years, are situated at the foot of the Montagne Noire.
The grapes are harvested by hand, and each plot is vinified in its own designated tank, allowing for a better understanding of the potential of the various grapes at Domaine Les Païssels across different vintages.
