“I loved the 2020 Terrasses Du Larzac La Conscience, a blend of 40% Grenache and Syrah, with the remainder made up of Cinsault and Mourvèdre. Its deep purple color is followed by a magnificent nose of darker berries and blackcurrant, supported by spring flowers, damp earth, and a wonderful sense of minerality. Medium-bodied and perfectly balanced, it features fine tannins, well-integrated acidity, and a pure, layered, and incredibly impressive style. About the estate:

Mas Conscience has changed hands and is now led by Audrey Bonnet-Koenig, who previously oversaw technical operations at Château de Sérame and managed La Peira after working at Dubourdieu. She is assisted by the renowned oenologist Claude Gros. Let’s hope this new team continues the quality-driven revitalization of this beautiful estate that Nathalie and Éric Ajorque began.

On the nose, violet blends with baked fruit, blackberry coulis, cranberry, and a hint of fig. On the palate, it is dense, concentrated, and full-bodied, yet it offers plenty of freshness, a sharp acidity, and a distinct crispness, making it surprisingly succulent. The finish is spicy, with notes of blueberry and vanilla.

Founded by Éric and Nathalie Ajorque, this 15-hectare organic vineyard, located at the foot of the Séranne mountain range, was purchased in 2000 by Roman Kocholl, who fulfilled his dream after a long career in the digital industry in Hamburg. At the helm is Audrey Bonnet, an agricultural engineer and former director of the Peira winery, supported by Claude Gros, a renowned consulting oenologist.
