Shaped by the Kimmeridgian marl, this cuvée—comparable to a “grand cru”—will reveal its full potential over time. Initially , the Sauvignon’s fruity character comes to the fore in the early years, but it will be worth letting it age in the cellar for a few years so that the terroir can take center stage. Excellent aging potential!

At optimal maturity

Wine Production

Cold settling (7°) for 48 hours, followed by alcoholic fermentation in temperature-controlled stainless steel tanks (13–18 °C). Light filtration and bottling.

Livestock Farming

6 to 8 months on its fine fermentation lees, with stirring once a week for a period of three months.

About the estate:

In the heart of Le Bouchot, an old winegrowing village in the Pouilly region, Gilles Chollet took over from his father in 1986. He was joined by his son Séverin in 2010, who has since taken the reins of this 14-hectare vineyard.
