Here, Sauvignon takes root on the limestone slopes north of Pouilly, drawing all its typicality from the "Caillottes" soils. On the nose, the wine expresses white-fleshed fruits and citrus fruits with a marked aromatic intensity. The mineral character of this cuvée adds complexity and length to the wine. Very typical!

About the domain :
In the heart of Bouchot, an old Pouillyssois winegrowing village, Gilles Chollet took over from his father in 1986. He was joined by his son Séverin in 2010, who is now at the helm of this 14-hectare vineyard.
