Winemaking

Cold settling (7°C) for 48 hours, followed by alcoholic fermentation in temperature-controlled stainless steel tanks (13–18°C). Light filtration and bottling.

Livestock farming

6 to 8 months on its fine lees, with stirring once a week for a period of three months.

About the estate:

In the heart of Le Bouchot, an old wine-growing village in the Pouilly region, Gilles Chollet took over from his father in 1986. He was joined by his son Séverin in 2010, who has since taken the reins of this 14-hectare vineyard.
