As with red wine production, alcoholic fermentation takes place with the skins in stainless steel tanks, with punching down for 10 days. The wine is racked before fermentation is complete to develop silky tannins. Malolactic fermentation is carried out to round out the palate.

About the estate:

It is one of the most famous estates in Provence. It belongs to the Combard family, who manage this 85-hectare vineyard, 30 hectares of which are leased. The vines, located along the coast on schist soil, have been cultivated using organic methods since 1979. Steps are currently underway to transition the entire estate to biodynamic farming. We applaud this commitment, which is no small feat for an estate of this size. While the wines are among Provence’s most reliable offerings, the family also goes above and beyond in welcoming visitors and, during the sunny days of the season, offers a cultural program that’s well worth the trip.

A strange wine. The initial aroma is gassy, as if it had been opened on the stove without turning it on, followed by a second aroma of cooked asparagus. The finish is bitter and lacks acidity. Not at all pleasant.
