"The Soul of the Commandery"

Crafted from a skillful blend of Cinsault, Grenache, Syrah, Mourvèdre, and Tibouren, sourced from single-vineyard selections of the estate’s old vines, this rosé is characterized by its balance and complexity. Refined and elegant, the nose reveals notes of white-fleshed fruits, citrus, and white flowers. On the palate, it is harmonious, silky, delicate, and lively, ending with a lovely, fresh finish enhanced by a hint of salinity. Pair with a grilled sea bass fillet or a langoustine salad with citrus.

Winemaking

Gentle pneumatic pressing, careful separation of the juices, and traditional winemaking in temperature-controlled stainless steel tanks are all steps that precede our blending of the finest batches produced each year

Livestock farming

As soon as fermentation is complete, a light racking off the lees allows us to retain only the best of the lees, which are then carefully worked to enhance both the aromatic expression and the longevity of these aromas.

About the estate:

Founded in 1204 by the Knights Templar, Peyrassol is a magical place. Acquired in 1789 by the Rigord family, the wines have made a name for themselves and are consistently ranked among the best in Provence. Forced to sell in 2001, Philippe Austruy acquired these 1,000 hectares of forest and 100 hectares of vineyards. He renovated the buildings with passion and dedication, notably transforming the garden into an open-air museum. The wines gradually found their stride, and the arrival of Stéphane Derenoncourt as a consultant, combined with the modernization of the winery, marked a new milestone.
