Currently in the process of converting to organic farming: no chemical fertilizers, no herbicides, and occasional applications of manure to help the vines reach a ripe old age. Pruned using the Gobelet method.

Grape Harvest

Winemaking

Selection of grapes by vineyard block and grape variety. Destemming, crushing, and gravity-fed transfer to temperature-controlled stainless steel tanks. Cold maceration of the grapes at 8°–10°C, followed by pumping over. Alcoholic fermentation at 23°C, with punching down. Hot maceration at 32°C, with punching down.

50% in raw concrete tanks and 50% in 52-hectoliter casks for 12 months

The Dalmeran estate, located in the heart of Les Baux-de-Provence, also owns a beautiful vineyard in Châteauneuf-du-Pape and offers a remarkable range of wines with strong character that deserve to be better known. The Joyce family oversees both viticulture and winemaking, and their 2011 vintage is particularly successful.
