Currently in the process of converting to organic farming: no chemical fertilizers, no weed control, and occasional applications of manure to help the vines reach a ripe old age. Pruned using the Gobelet method.

Grape Harvest

Wine Making

Selection of grapes by vineyard block and grape variety. Destemming, crushing, and gravity-fed transfer to temperature-controlled stainless steel tanks. Cold maceration of the grapes between 8° and 10°, followed by pumping over. Alcoholic fermentation at 23°, with punching down. Hot maceration at 32°, with punching down.

50% in raw concrete tanks and 50% in 52-hl casks for 12 months

The Dalmeran estate, located in the heart of Les Baux-en-Provence, also owns a beautiful vineyard in Châteauneuf-du-Pape and offers a remarkable selection of wines with strong character that deserve to be better known. The Joyce family takes great care in both viticulture and winemaking, and their 2011 vintage is particularly successful.
