Vinified in 30-hectoliter vats using indigenous yeasts. The winemaking process is tailored to the characteristics of each vineyard plot to best preserve the grapes and the terroir. Gentle pumping-over, similar to an infusion, is performed daily. This wine is made in part from purchased grapes.
