Vinified by vineyard lot in 30-hectoliter temperature-controlled stainless steel tanks, with gentle, regular pumping over. Fermentation takes place using indigenous yeasts.

Aged for 18 months in traditional oak barrels that have previously held 2 to 3 other wines, then blended before bottling
