After destemming without crushing, the grapes are placed directly into vats. Fermentation takes place at around 26°C, with periodic racking and pumping over. The wine is left to ferment in vats for at least 3 weeks, followed by malolactic fermentation in French oak barrels.

The Grier family, owners of a South African vineyard renowned for its sparkling wines, established this 25-hectare estate in a single block in the Fenouillèdes region in 2006. About the wine:

Not yet bottled, the 2016 Galamus is a blend of nearly equal parts Syrah, Grenache, and Carignan, aged in 30% new oak. Notes of toast, cedar, and vanilla dominate the nose, but there is plenty of rich, velvety fruit to balance things out. It is full-bodied and ripe, bordering on heat and excess, so drink it as soon as it’s released and over the next two years to enjoy its hedonistic qualities.
