Aimer, Rêver, Prier, Se Taire 2020 offers a delightful experience: after opening the bottle, let the wine breathe gently... What unfolds is a complex nose, with aromas of ripe, crisp red fruits, along with herbaceous hints and notes of blackberry, raspberry coulis, and morello cherry, all set against a subtly present oak backdrop. Dense and refined on the palate, it is powerful yet not heavy, with beautiful breadth, pronounced tannins of exceptional texture, leading to a refined, smoky finish. Treat yourself!

Food and Wine Pairings

Food and Wine Pairings

It pairs well with a simple marrowbone with coarse salt, a “meurette” egg poached in red wine and shallots, a pâté en croûte, a vol-au-vent, a chicken liver salad, a shoulder of lamb, a rabbit, or a simply roasted partridge...

About the estate:

Hervé Bizeul, a winemaker and maverick writer, has little left to prove, as his estate ranks among the elite of Roussillon. That doesn’t stop him from constantly challenging himself, exploring new avenues, innovating, thinking outside the box, and creating new vintages. A prime example is his Pinot Noir, which appeared out of nowhere and bravely withstands the harsh sun and the tramontane winds of the Agly Valley. Here, each cuvée displays a personality all its own—sometimes uncompromising—much like its winemaker. From no fewer than seven different terroirs emerges a serious and diverse interpretation of Roussillon. A model of its kind.
