Winemaking

Vinification using the "mille-feuille" method, with destemmed and undestemmed grape slices layered on top of one another. A starter culture from these same vines is added to the pomace to initiate alcoholic fermentation. Alcoholic fermentation temperatures range from 20 to 27°C. Maceration lasts 15 days. Pressing is done without re-pressing, and alcoholic fermentation is completed. Malolactic fermentation then begins spontaneously. This wine is neither filtered nor sulfited.
