Winemaking

Vinification using the "mille-feuille" method, with destemmed and undestemmed grape slices layered alternately. A starter culture from the same vines is added to the pomace to initiate alcoholic fermentation. Alcoholic fermentation temperatures range from 20 to 27°C. Maceration lasts 15 days. Pressing is done without re-punching down, and alcoholic fermentation is completed. Malolactic fermentation then begins spontaneously. This wine is unfiltered and unsulfited.

To start with, you should clearly state in bold that this is a natural wine, with all that entails. Flaws: a finish reminiscent of gouache and a stable. Furthermore, your description of this wine is inaccurate—color, nose, and palate. Natural wines are a scam. There are fake connoisseurs for this type of wine, but it’s an abuse of vulnerable people. There would never have been great wines without a minimum amount of sulfur. Pure heresy.
