This trio of red grape varieties, carefully vinified by Maxime Dancoine and Guillaume Lavie, offers us a wine that's more than likeable. The nose reveals a powerful, wild side, with notes of white pepper, ripe fruit and clove. Winemaking

Each grape variety is vinified separately. Mille-feuille vinification with destemmed and unstemmed slices for Gamay and Pinot, and no destemming for Mondeuse. A pied de cuve from the same vines is added to the marc to kick-start alcoholic fermentation. Fermentation temperatures range from 20 to 27°C. Maceration times vary between 12 and 15 days, depending on grape variety, ripeness and health. Pressing without reboiling, and end of AF in alcoholic phase. Blending takes place after a week's rest. Then MLF begins spontaneously. The first bottling comes exclusively from the tank while for the spring and summer runs, around 1/3 of the blend is aged in barrel.

12 to 18 °C, depending on whether you're looking for rustic and fresh or full-bodied, sweet and fruity.

Open

Aerate and decant for several hours to allow the wine to express itself fully.
