This trio of red grape varieties, carefully vinified by Maxime Dancoine and Guillaume Lavie, offers us a more than pleasant wine. The nose reveals a powerful, wild side, with notes of white pepper, ripe fruit, and cloves. Its palate is marked by a beautiful youthfulness but also ripe yet present tannins, offering a pleasant chewiness, not lacking in roundness and fruitiness. A wine of pleasure, without a doubt!

Wine making

Each grape variety is vinified separately. Vinification is carried out in layers with destemmed and non-destemmed slices for the Gamay and Pinot varieties, and no destemming for Mondeuse. A starter culture from these same vines is added to the marc to start alcoholic fermentation. AF temperatures range between 20 and 27°C. Maceration times vary between 12 and 15 days depending on the grape variety, ripeness and health of the grapes. Pressing without punching down, and end of AF in the alcoholic phase. Blending takes place after a week of rest. Malolactic fermentation then begins spontaneously. The first bottling comes exclusively from vats, while for the spring and summer bottlings, around one-third of the blend is aged in barrels.
