Wine Production

One-day settling at 4°C; spontaneous alcoholic fermentation begins when the must warms to around 15°C. A constant temperature below 19°C is maintained throughout alcoholic fermentation; spontaneous malolactic fermentation begins at the same time as alcoholic fermentation; sulfiting is performed only at the time of blending, at a rate of 1 g/hl.
