Blending carried out after the end of alcoholic fermentation, malolactic fermentation carried out on the blend, very little SO2 added (20 mg) at bottling, i.e. 43 mg/l in total.

Livestock farming

In 228-liter barrels and ½ muids of 400 liters with very light stirring (15 seconds per barrel) carried out using a stainless steel whisk, with a measured up-and-down motion once every two weeks for a period of two months.

About the estate:

Maxime Dancoine, an oenologist, cultivates only a very small vineyard, located in Aiton, at the western end of the Maurienne massif. Nevertheless, the wine produced there is beginning to attract the attention of wine lovers. Highly meticulous, biodynamically inspired and certified organic since 2017, it is part of the diversity and ambition that characterizes the generational renewal of Savoyard viticulture. This approach makes perfect sense in light of the new plantings that favor endemic grape varieties such as Jaubertin and Blanc de Maurienne.
