After pressing, 2 g/hl of sulfur dioxide was added, followed by chilling to facilitate settling, which took place three days later. A stir of the lees was performed at the end of alcoholic fermentation to allow for the natural and complete conversion of sugars into alcohol.

Aged for 8 months in 228-liter barrels without stirring, with regular topping up throughout the aging period

About the estate:

Maxime Dancoine, a winemaker, cultivates only a very small vineyard located in Aiton, at the western edge of the Maurienne Massif. Nevertheless, the wines produced there are beginning to attract the attention of wine enthusiasts. Meticulously tended, inspired by biodynamic principles, and certified organic since 2017, it embodies the diversity and ambition that characterize the generational renewal of Savoyard viticulture. This approach takes on full meaning in light of new plantings that prioritize indigenous grape varieties such as Jaubertin and Blanc de Maurienne.
