Partially destemmed harvest, cold maceration (5 to 6 days) at 8°, alcoholic fermentation between 10 and 18 days, devatting followed by settling 36 hours later, malolactic fermentation.

Nose

Sincere fruit freshness, bouquet notes, spicy and rustic: Humus, gouache and graphite, Damask rose, Morello cherry and quetsche, pepper and nutmeg, laurel, chicory and sap.

Mouth

Both full-bodied and fruity, it expresses elegant aromas of violet and black fruit, which develop on fine, harmonious tannins.

About the domain :

This was Eugène Carrel's estate, taken over by his son Olivier, who has been associated since 2022 with Thomas Senger, a Parisian in his thirties who cut his teeth at LVMH, notably in the USA. If Olivier wanted to make "the greatest wine in the world with Altesse", on the terroirs of Jongieux and Cru Marestel, he had the passion more than the means. Thomas arrives with considerable investment capacity (new winery, wine tourism projects, marketing, sales prices). All that remains is to improve the viticulture, which is still conventional. In short, an estate that is doing well and will do better.

About the domain :

The Carrel family, winegrowers from father to son for six generations since 1830, is one of Savoy's finest vineyards, producing both red and white wines. Specialized in the 1970s by Eugène Carrel and managed by his son Olivier from 1994 onwards, the estate and its 33 ha planted on the steep slopes of Mont de la Charvaz and Mont du Chat were taken over in 2022 by Thomas Senger, a young Savoyard entrepreneur with a passion for wine.
