Wine Making

In the first year, the grapes used for Armagnac are harvested and distilled (only the white grape varieties) in inert stainless-steel tanks for 12 months. In the second year, the red grape varieties (for rosé Floc; white for white Floc) are harvested, then bled and macerated (to extract the juice and develop color), after which the musts are poured into tanks until they are two-thirds full so that the remaining one-third can be added as Armagnac (this is known as “mutage”). This blend is kept in tanks for a few months before being released on March 15 of the third year.
