After slow pressing, the lightly clarified juices ferment in demi-muids (600 L) that are 1 to 8 years old and in newer Stockinger casks.

Aged for 1 year on the lees with stirring in barrels and large casks, followed by 6 months in blending tanks, before being bottled after 2 winters
