After slow pressing, the lightly settled juices ferment in 600-liter demi-muids (half-barrels) aged between 1 and 8 years old and recent Stockinger casks.

Livestock farming

Aged for one year on lees with stirring in barrels and casks, then six months in blending tanks before bottling after two winters.
