Terroirs

It takes its name from a 12th-century grain mill situated on a hill. The soil consists of crumbly granite, interspersed here and there with crystalline rock.

Viticulture

Short-stemmed, 3 to 5 shoots with 2 buds each; suckering and removal of lateral shoots in the fall, plowing in the winter, and scarification in the spring

Winemaking

After hand-harvesting and selective sorting of whole clusters; traditional method, temperature control via thermoregulation, submersion of the grapes in the juice during fermentation (grillage), carbonic maceration for 10 to 12 days.

Livestock farming

Stainless steel and cement tanks, malolactic fermentation in large oak casks, followed by approximately 10 months of aging. The wines are clarified and filtered using primarily natural and traditional methods. Each vineyard plot is vinified separately to achieve the finest balance between structure and finesse characteristic of these terroirs.
