It owes its name to a 12th-century grain mill situated on a hill. The soil consists of crumbly granite, interspersed here and there with crystalline rock.

Short-stemmed, 3 to 5 canes with 2 buds each; removal of suckers and lateral shoots in the fall, plowing in the winter, and hoeing in the spring

Winemaking

After a manual harvest and selective sorting of whole clusters; traditional method, temperature control via thermoregulation, immersion of the grapes in the juice during fermentation (grillage), and carbonic maceration lasting 10 to 12 days.

Livestock farming

Stainless steel and cement tanks; malolactic fermentation in large oak casks, resulting in an aging period of approximately 10 months. The wines are clarified and filtered using as many natural and traditional methods as possible. Each vineyard plot is vinified separately to achieve the finest balance between structure and finesse characteristic of these terroirs.
