The whole bunches are placed in a pneumatic press, then the must is left to rest for 12 hours at a temperature of 12 to 15°C in large vats specially designed for this purpose, which accelerate natural sedimentation. The must ferments at 20°C for 3 weeks.

About the estate:

Michel Laroche is a wine merchant and producer, and one of the leading figures in the Chablis region. With vineyards that have grown from 6 hectares in the late 1960s to 100 hectares today, the estate—founded in 1850—is based at the Obédiencerie, a former monastery built above a 9th-century crypt that once housed the relics of Saint Martin. A key name in Chablis wines, it joined the Advini group in 2009. Michel Laroche now devotes himself to his new property, created from family vineyards, the Dom. d'Henri.

About the estate:

Since 2009, the trading house, the Laroche estate, and its exceptional vineyards have belonged to the Advini group. Thanks to a skilled technical team led by oenologist Grégory Viennois, the style has been refined, with more subtle aging processes resulting in wines that are purer in expression and less rich and opulent than in the past. Perfectly ripe grapes are vinified here in barrels, without ever squeezing or masking the wines. The expression of the terroirs is very clear, but the style is not precocious.
