The presence of bluish clay and mainly morning sunshine give the "Blanchots" a very distinctive character, giving the wine a dominant floral character and remarkable finesse, full-bodied and generous, with great harmony and a very mineral finish with slight hints of iodine and smoke. A great Chablis!

The mineral purity of this wine pairs beautifully with Japanese cuisine featuring raw fish (such as sea bream sushi or pollock maki, for example). Alternatively, tender, creamy white meats, either grilled or cooked in a casserole, are also perfect. When it comes to cheese, opt for small fresh goat cheeses or herb-flavored faisselle.

About the estate:

Cécilia Trimaille has just taken up residence in Chablis, replacing Matthieu Mangenot at the helm of the Long-Depaquit estate, the Chablis branch of the Bichot family since 1970. The vineyard is one of the most comprehensive in the region, covering 65 hectares, including five of the appellation's seven grands crus (not counting the famous La Moutonne monopole). A tasting here provides a good overview of the diversity of the area's terroirs. The 2017 vintage is good, despite the spring frost, which affected volumes more than quality. With the exception of the disappointing Les Lys premier cru, all the other vintages tasted well.

About the estate:

A well-known Beaune-based producer, Albert Bichot owns the Long-Depaquit estate in Chablis, which is established on a prestigious range of crus, including the La Moutonne grand cru, which enjoys the sunniest exposure in the appellation. The wines often express a roundness and generosity that makes them accessible when young. While the range appears more consistent, the expression of the terroirs could certainly gain in intensity and precision. Cécilia Trimaille, 31, the new estate manager, will strive to support this progress.
