Both agricultural engineers and oenologists, Sophie and Matthieu Woillez have been based in the commune of Tharoiseau since 2009. Their 13-hectare vineyard, planted mainly with Chardonnay, covers a hillside facing Vézelay. The conversion to organic farming is underway.
