Gentle pneumatic pressing, juice cold settled for 24-36 hours, alcoholic fermentation in stainless steel tanks at low temperature, 100% malolactic fermentation.

Breeding

For 8 months, 90% in stainless steel tanks and 10% in barrels (3% of which are new), followed by 3 months in stainless steel tanks for the entire cuvée.

About the domain :

The Devillard family has expanded beyond the borders of Burgundy with the purchase of Maison Rolet in the Jura. In Mercurey, Château de Chamirey remains the largest of their Burgundy estates, with 37 hectares, including 15 Premier Cru. A special feature of the estate is the table d'hôtes in the heart of the hamlet. A skilled technical team, with the arrival of a new cellar master, Carole Briffox, advised by oenologist Enrico Peyrone, constantly strives to improve work in the vines, in winemaking and in ageing, always in pursuit of excellence. After a particularly successful 2017, the estate has captured the full potential of 2018, its intensity but also its finesse. A step up in our hierarchy could be coming very soon.
