“Great value! It’s quite similar to the ‘Cloux,’ except that it’s significantly spicier. Once again, the flavors are very rich and dense on the mid-palate, offering an alluring mouthfeel, wrapped in a slightly more complex finish where a hint of bitter lemon comes through. A fine wine well worth a try. (89-92)/2022+” (Burghound - Allen Meadows 2018) Absolutely captivating!

Wine rated (2020 guide) 15/20 (Very good wine)
Winery rated 1 star (A high-quality, recommended wine that lives up to what one would expect from its appellation(s))
About the wine:
Ripe yellow fruit and a minty freshness come together to create a harmonious, classic blend.
About the estate:
The Jaeger-Defaix estate comprises 6 hectares in Rully, including 4.5 hectares of Premier Cru vineyards, and has been certified organic since 2012. Hélène Jaeger-Defaix, an agricultural engineer and oenologist and the wife of Didier Defaix (of the Bernard Defaix estate in Chablis), is at the helm. A viticultural approach that involves plowing the soil and winemaking practices that respect the harvest as much as possible—with the aim of allowing the vineyards to express themselves—is beginning to pay off. The 2017 vintage has shown itself to be at its best, with wines of a classic and refined style.

About the wine:
A first growth with a mineral and fruity nose, round and full-bodied on the palate, supported by well-integrated oak.
About the estate:
Hélène Jaeger, the wife of Bernard Defaix, a winemaker in Chablis, took over the vineyard of her great-aunt Henriette Niepce in 2005. She immediately began the transition to organic farming (certified in 2009).

Selected Winery (Please note that this guide is a ranking, and as such, all the wineries listed here—even those without a star—represent, in our view, the pinnacle of French winemaking.)
About the estate:
In 2002, Hélène Jaeger first took over a plot of Rully Premier Cru that had belonged to her great-aunt Henriette Niépce—a descendant of the famous inventor—and then the entire estate in 2005. Married to Bernard Defaix, a winemaker in Chablis, she applies the principles characteristic of fine wines, with meticulously tended soils and hand-harvested grapes. The vintages are vinified at the Chablis winery, which is fully equipped; the white wines are aged in barrels.
