“Top Value! It’s quite similar to the ‘Cloux,’ except that it’s significantly spicier. Once again, the flavors are very rich and dense on the mid-palate, offering an alluring mouthfeel, wrapped in a slightly more complex finish where a hint of bitter lemon comes through. A lovely wine that’s well worth trying. (89-92)/2022+” (Burghound - Allen Meadows 2018) Absolutely captivating!

Wine rated (2020 guide) 15/20 (Very good wine)
Winery rated 1*Star (A high-quality, recommendable production that lives up to what one would expect from its appellation(s))
About the wine:
Ripe yellow fruit and a minty freshness come together to create a harmonious, classic blend.
About the estate:
The Jaeger-Defaix estate spans 6 hectares in Rully, including 4.5 hectares of Premier Cru vineyards, and has been certified organic since 2012. Hélène Jaeger-Defaix, an agricultural engineer and oenologist and the wife of Didier Defaix (of the Bernard Defaix estate in Chablis), is at the helm. A viticultural approach that involves plowing the soil, combined with winemaking practices that respect the harvest as much as possible—with the goal of allowing the individual plots to express their full potential—is beginning to pay off. The 2017 vintage was at its very best, producing wines of a classic and refined style.

About the wine:
A premier cru that is mineral and fruity on the nose, round and full-bodied on the palate, with good oak notes.
About the estate:
Hélène Jaeger, the wife of Bernard Defaix, a winemaker in Chablis, took over the estate of her great-aunt Henriette Niepce in 2005. She immediately began the transition to organic farming (certified in 2009).

Selected Wineries (Please note that this guide is a ranking, and as such, all the wineries listed here—even those without a star—represent, in our view, the pinnacle of French winemaking.)
About the estate:
In 2002, Hélène Jaeger first took over a plot of Rully Premier Cru that had belonged to her great-aunt Henriette Niépce—a descendant of the famous inventor—and then acquired the entire estate in 2005. Married to Bernard Defaix, a winemaker in Chablis, she applies the principles characteristic of great wines, with carefully tended soils and hand-harvested grapes. The wines are vinified at the Chablis winery, which is fully equipped; the white wines are aged in barrels.
