Cold pre-fermentation, followed by vinification with native yeasts in concrete tanks (isothermal). Punching down and pumping over twice a day during fermentation. Vatting for approximately 15 days, followed by racking.

About the estate:

The Domaine des Rois Mages was founded in 1984 by Anne-Sophie Debavelaere and has since expanded to include vineyards in Rully, Bouzeron, and Beaune, now totaling 11 hectares, all cultivated using sustainable farming practices. Anne-Sophie’s son, Félix, who has been involved since the 2009 vintage, is increasingly finding his footing at the estate, ensuring a smooth transition.
