Wine making

Whole grapes are pressed for 2.5 hours in a pneumatic press, then the juice is drained into stainless steel vats and settled at 12 degrees overnight. The must is then transferred directly into barrels for alcoholic fermentation.

Livestock farming

Aged for 12 months in new barrels and partly in old barrels, then racked and aged for an additional 4 months in 68hl wooden vats, then the remainder racked into stainless steel vats and lightly filtered before bottling.

Expressive, with subtle notes of peony and wax

Mouth

Well-balanced, with time, the wine reveals more body and richness and loses some of its citrus notes, with a slightly mineral texture. A delicate and seductive wine with a tangy finish.

About the estate:

Francine Picard, Michel's daughter, is putting all her considerable energy and idealism into reshaping the style of the wines produced by the family empire, which encompasses 140 hectares of vineyards. Since May 2019, she has been supported by Antoine Lepetit, a biodynamic consultant and her new technical director. The estate will be certified organic at the end of 2019 and changes are set to continue with even more precise vinification and aging processes. An extensive range of high-quality red and white wines provides a real insight into the different climates of the Chassagne and Saint-Aubin area.
