Whole grapes are pressed for 2 hours and 30 minutes in a pneumatic press; the juice is then transferred to a stainless-steel tank, where it settles at 12 degrees for one night, after which the must is transferred directly to barrels to undergo alcoholic fermentation.

Livestock farming

Aged for 12 months in new barrels and partly in used barrels, then racked and aged for an additional 4 months in 68hL wooden vats, after which the remainder was racked into stainless steel tanks and lightly filtered before bottling

Francine Picard, Michel’s daughter, is devoting all her considerable energy and idealism to reshaping the style of the wines from the family estate, which spans 140 hectares of vineyards. Since May 2019, she has been supported by Antoine Lepetit, a biodynamic consultant and her new technical director. The estate will be certified organic by the end of 2019, and changes are expected to continue, leading to even more precise winemaking and aging processes. A wide range of high-quality red and white wines offers a true glimpse into the different terroirs of the Chassagne and Saint-Aubin regions.
