Nicolas Fèvre

This family-owned estate is located in the heart of the village of Saint-Romain. When the family estate ceased operations in 2000—as he was too young to take it over, but passionate about the craft—Nicolas Fèvre studied at the Beaune wine school and went on to earn the National Diploma in Oenology. Once he had earned this degree, to gain experience and travel, Nicolas Fèvre went abroad to work on several winemaking projects: in the United States, Australia, and South Africa. Upon his return in 2009, Nicolas Fèvre became a consulting oenologist at a wine analysis laboratory. Then, in 2013, his dream came true, and Nicolas Fèvre was able to reclaim his parents’ vineyards, which had previously been leased out. This provided him with the opportunity to establish himself as a part-time winemaker and produce white Saint-Romain, red Saint-Romain, red Auxey-Duresses, and Bourgogne Aligoté from the family’s vineyards. The vineyard is cultivated using sustainable methods, including organic fertilization, plowing, and simple Guyot pruning. The estate does not use herbicides, chemical fertilizers, insecticides, or anti-rot treatments. The grapes are harvested by hand, and winemaking is kept as natural as possible with minimal intervention.
