Nicolas Fèvre

This family estate is located in the heart of the village of Saint-Romain. When the family estate closed in 2000, Nicolas Fèvre was too young to take it over, but passionate about the profession, he studied at the Beaune wine school and then obtained the National Diploma in Oenology. Once he had obtained his diploma, Nicolas Fèvre went abroad to gain experience and travel, working in wine production in the United States, Australia, and South Africa. Once he had obtained his diploma, Nicolas Fèvre decided to gain experience and travel, so he went abroad to work in wine production in the United States, Australia, and South Africa. On his return in 2009, Nicolas Fèvre became a consultant oenologist in a wine analysis laboratory. Then, in 2013, his dream came true and Nicolas Fèvre managed to recover the vineyards that his parents had previously leased out. This was an opportunity for him to set up as a winegrower. He began by working with his father and brother, then in 2014 he took over the vineyards. Then, in 2013, his dream came true and Nicolas Fèvre managed to reclaim his parents' vineyards, which had previously been leased out. This gave him the opportunity to set up as a part-time winegrower and produce Saint Romain white, Saint Romain red, Auxey-Duresses red, and Bourgogne Aligoté on the family plots. The vineyard is cultivated using sustainable methods with organic fertilization, plowing, and simple Guyot pruning. The estate does not use weed killers, chemical fertilizers, insecticides, or anti-rot treatments. The grapes are harvested by hand, and the winemaking process is as natural as possible with minimal intervention. The wines are aged in oak barrels for 12 months before being bottled.
