Nicolas Fèvre
This family-owned estate is located in the heart of the village of Saint-Romain. When the family estate closed in 2000—as he was too young to take it over but passionate about the trade—Nicolas Fèvre studied at the Beaune wine school and went on to earn the National Diploma in Oenology. Once he had earned his diploma, to gain experience and travel, Nicolas Fèvre went abroad to work on several winemaking projects: in the United States, Australia, and South Africa.
Upon his return in 2009, Nicolas Fèvre became a consulting oenologist at a wine analysis laboratory. Then, in 2013, his dream came true and Nicolas Fèvre was able to reclaim his parents’ vineyards, which had previously been leased out. This provided the opportunity to establish himself as a part-time winemaker and produce Saint Romain white, Saint Romain red, Auxey-Duresses red, and Bourgogne Aligoté on the family plots.
The vineyard is cultivated using sustainable methods, including organic fertilization, plowing, and simple Guyot pruning.
The following are not used on the estate: herbicides, chemical fertilizers, insecticides, or
anti-rot treatments. Harvesting is done by hand, and winemaking aims to be as natural as possible with minimal intervention.
