About the estate:

Both agricultural engineers and oenologists, Sophie and Matthieu Woillez have been based in the town of Tharoiseau since 2009. Their 13-hectare vineyard, planted mainly with Chardonnay, covers a hillside overlooking Vézelay. They are in the process of converting to organic farming.

Chardonnay isn’t just about Chablis—there’s also Vézelay. Simple, light, and crisp, L’Élégante reveals itself on the palate with delicate flavors of lemon, grapefruit, and limestone, rounded out by a rich, buttery texture. The delightful and refreshing finish lingers on the minerality, complemented by subtle minty notes. Rating capped at 4 because the price of this cuvée is starting to get steep. At 10, the Elégante paired beautifully with butter-white sauce-glazed cod fillets, served with the first green asparagus of the season.
