Congo 2015 is a selection of the best Grenache grapes from an old vineyard in the village of Real de San Vicente, grown on granite soils from the same vines as one of the vineyards that produces Tres Patas. Only the 2007 and 2009 vintages had been produced previously, as harvesting grape by grape was too laborious. This wine was aged in French oak casks (the equivalent of ten Burgundy barrels, or 2,280 liters), where it matured for 18 to 20 months. About the estate:
I have sampled a selection of Canopy's finest wines on several occasions. The wines remain fresh even in a sunny vintage such as 2015. The vines are cultivated organically, fermentation is carried out using indigenous yeasts, and the wine is aged in barrels that have been used for two or three vintages, with a preference for large containers, which rounds out the tannins without leaving any mark on the wine. This is a very high-quality estate, producing wines that perfectly reflect the vintage and their chosen terroir.
