Traditional, separately destemmed varieties, fermentation in temperature-controlled stainless steel vats (between 26 and 28°C), skin maceration for around two weeks for Sangiovese and 20 days for Merlot and Cabernet Sauvignon, gentle extraction, malolactic fermentation in barrels and stainless steel vats.
