Traditional, varieties destemmed separately, fermentation in temperature-controlled stainless steel vats (between 26 and 28 °C), skin maceration of about two weeks for Sangiovese and 20 days for Merlot and Cabernet Sauvignon, gentle extraction, malolactic fermentation in barrels and stainless steel vats.
