Wine making

After the first selection in the vineyards, a second selection takes place in the winery before destemming, followed by plot-by-plot pressing in open-top barrels, fermentation with natural indigenous yeasts for up to two weeks, six to eight daily manual punch-downs and pump-overs, maceration on the skins for an additional week, and malolactic fermentation in old barrels.

About wine:

As with Testamatta, there is a delicious flavor of raspberry and spicy plum. A superb wine combining high acidity and enveloping freshness with concentrated licorice and velvety tannins. The juicy and subtly structured finish has staying power and persistence. Both Bibi Graetz wines stop you in your tracks. The grapes were selected from four different vineyards, each of which was harvested up to eight times to ensure full ripeness, with vines aged at least 70 years.

Compared to Testamatta, which proved more difficult during the blending phase, Bibi Graetz's Colore 2018 went smoothly, as he recounts. With this vintage, Colore (with 9,000 bottles produced) has almost become a single-vineyard wine, since up to 90% of its fruit comes from old vines (these are majestic plants aged between 80 and 135 years) in the high-altitude area of Lamole, where Bibi cultivates five hectares. The addition of Colorino to this Sangiovese wine has been reduced to just 5% in this vintage: "A bit like a touch of lipstick," says Bibi. The Colorino grape brings remarkable elevation and liveliness to this vintage. Compared to Testamatta, this wine has more structure, with deep, penetrating aromas of red berries, ruby cherries, crushed aspirin, iron-rich earth, crushed flowers, and a few aromatic herbs used in Fernet-Branca. My only hesitation is that the wine takes time to open up on the bouquet, and I coaxed two bottles of Colore for two days before writing this review. As a result, I recommend postponing consumption for a few more years to give the wine time to develop and open up fully.

About wine:

Made from very old vines and a blend of 90% Sangiovese, 5% Colorino, and 5% Canaiolo, this lovely red wine offers delicate and seductive aromas of plum, vanilla, crushed mint, and fragrant blue flowers. Elegantly structured and with good aromatic depth, the flavorful and concentrated palate offers marasca cherry, orange peel, mocha, and licorice. It is well-balanced, with taut, refined tannins and fresh acidity. Drink between 2023 and 2033.
