Unfortunately, they were out of the 2014 vintage, so we had to switch from the 2013 to the 2015 Château Chalon, their iconic flagship wine. The 2015 vintage was hot, and the harvest took place on September 15, nearly a month earlier than in 2013. The 2015 Château Chalon is rounder and more supple than the 2013; they harvested healthy grapes and everything went smoothly. It can, of course, be enjoyed right now, but it’s best to keep the bottles (they say six years in barrel plus six years in bottle before considering drinking it…), and it will age well, very well indeed. A true “yellow” wine—straightforward, crisp, harmonious, and easy to drink—whose complexity stems not only from aging under a yeast veil. Now in the hands of Laurent Macle, this estate navigates the vintages with such consistency and such a distinct identity that it commands universal respect. Founded in 1850, it owns some of the steepest terroirs in the appellation, with slopes reaching up to 50%. The decision to plant vines on land where, at one time, no one dared to venture underscores the determination and passion of this winemaking family, which has become inseparable from the Château-Chalon vineyard.
