""It is nuanced, with increased complexity due to its older age, more developed, subtle and refined. " (Wine Advocate) "

"Straight from the Jurassic marls, a pure Savagnin aged 3 years in barrels under veil. Dressed all in gold, you can tell it's a prince. There's nothing ostentatious about the approach, everything is delicate and restrained. Slightly toasted, the nose is typical. The palate is pleasant from the attack to the finish, with no jolt. A wine for contemplation". (Le Guide Hachette 2026)

Bettane & Desseauve

Bettane & Desseauve

Domaine rated 2*Stars (A serious and recommendable production, but a little more regular and homogeneous than the previous one)

About the domain :

The estate dominates the whole of Château-Chalon, perched on its rocky outcrop at an altitude of 450 metres. Jean handed over the reins to his daughter Hélène, who took over from him after a first life as a translator in Brussels, and ensures the smooth running of the 15-hectare estate. Certified organic since 2013, the wines are among the vineyard's success stories, particularly the sailing wines, the estate's great specialty. The yellow wines (4.5 hectares of Château-Chalon) are matured in magnificent vaulted cellars.

About the domain :

Domaine created in 1985 by Jean Berthet-Bondet, former mayor of Château-Chalon and an agricultural engineer, like his wife. Conducted according to the rules of organic farming, the 13 ha of vines and vaulted cellars have been managed since 2018 by their daughter Hélène.

Wine rated ( 2025 guide) 93+/100 (Great wine)

About the wine:

I tasted the 2019 Côtes du Jura Savagnin again, a year marked by a late frost on May 12, but after that the weather was warm and dry, resulting in concentrated wines. It shows notes of apple, cheese rind, spices and nuts, and seems to have a slight oxidation; it is nuanced, with increased complexity due to its older age, more developed, subtle and refined. It is 14% alcohol and full-bodied. This is a second bottling of 2019. The 2020 will be bottled now, after five years of ageing under veil. I also tasted the 1999, which came from an open bottle showing slight oxidation, but the palate was fantastic.

Domaine rated (guide 2024) 1*Star (Stars in the making or quality winegrowers with a good level of production, you won't be disappointed when you taste the wines from these estates)

About the domain :

Chantal and Jean Berthet-Bondet, both agricultural engineers, left the city in 1985 to create this 11-hectare estate, located equally in the Château-Chalon appellation and Côtes du Jura, and certified organic since 2013. Jean's daughter Hélène is now at the helm. Quality is progressing in the direction of fruit expression and purity. New cuvées and wine labels have been cleverly redefined, even if the cuvées matured under sail remain the undisputed stars of the domaine, with a Château-Chalon that can serve as a model for the prestigious appellation.
